Dirt is Good: The Microbiome and Human Health. “The built environment is the place in which our children grow up,” said Jack Gilbert, the director of the Microbiome Center and a professor of surgery at the University of Chicago. Gilbert is one of the authors who compared the immune profiles of Amish and Hutterite children, who, despite genetic similarities, grow up with very different immunities.
